This morning my 2 yr old daughter asked for a banana and a small slice of our banana bread! It was a good breakfast for us both. The bread turned out pretty good... I cut the amount of sugar in half (which didn't hurt the recipe a bit). I used all organic ingredients, including lowfat vanilla yogurt. I put in an extra banana in place of the sugar so the bread is super-moist. I'm so glad that you commented earlier about not making it more caloric than it needs to be because that made me re-evaluate recipes. You're right- a lot of things don't need all the extra sugar. I've acquired a taste for "less sweet" lately and this was just fine. Thanks again for all your tips!

Let us all know how they turn out. I'm also laughing because my kids and I watch "Ugly Betty" and on Friday's season opener, Betty made healthy muffins for the whole magazine staff.

Actually, I found a recipe that uses vanilla yogurt (which cuts the fat and sugar) and whole wheat flour. I'm excited to try it today! And yes, applesauce is a good substitute, too! Thanks for all the tips you give! Shall I mail you some bread when is done...ha, ha!!!

Just don't make the banana bread too caloric. I LOVE it, but some people make it with more calories than it needs.

Have you ever read that you can substitute apple sauce for butter and other fats?
